In this episode of Chefs of the Sierras, sponsored by DCS by Fisher & Paykel, Robert Cardenas from La Rosa Restaurant prepares La Rosa & Con Nopales.
La Rosa
3 table spoons of butter, divided one pound of fresh halibut
3 white mushrooms
1oz of white wine
1 pasilla pepper
1/2 cup heavy whipping cream
1/2 cup sour cream
1/2 lime juiced
3 teaspoons chipotle sauce
1oz. orange juice
1 1/2 teaspons of seasoning.
First pan fry halibut, mushrooms, corn and pasilla peppers. In a second pan add heavy whipping cream, sour cream lime juice, chipotle sauce, orange juice and seasoning. Strain halibut and vegetables. Combine with the cream sauce.
Con Nopales
12oz. Skirt steak
1/2 oz tequila
1 1/2 oz of pinnaple
1/2 Chipotle pepper
1 cup of black beans
1 avocado
2 oz tomato
2oz onion
2oz cilantro
1/4 lime juiced
1/2 teaspon seasoning
1 oz chopped jalapeno
1 jalapeno
2 cactus leaves
Marinate meat first in the mixture of tequila, pinapple juice and chipotle. Grill steak. Pan fry onions and jalapeno season with lime juice and seasoning. Mix all the ingredients for the guacamole. Serve with black beans and tortillas of choice on the side.
