Re: John Nelson as a chef

My wife and I have had the pleasure of eating numerous times at John's restaurant at the Blue Olive in Brasada Ranch, Oregon. He is a master at creating some wonderful dishes with seafood, meat or ad libbing from today's fresh ingredients (e.g. sturgeon fish). We highly recommend that if you want a wonderful meal, in a beautiful setting with incredible views that you visit John and his staff if you live or vacation in Central Oregon, near Bend or Redmond.

Re: Crab Cocktail and Halibut Cheeks

Who knew there was so much to know about a crab? I would have never thought of using some of the crab parts that Chef Nelson reccomends to add flavor to the dish. This was an educational and informative show for anyone who wants to know how to get the most from their crab meat!
