
Chef Charles Barrett was born and raised in Providence, Rhode Island but these days he calls Fayston, Vermont and the Hyde Away Inn home. A little more than ten years ago, Charles started as a line cook at the Hyde Away, and moved all the way up to head cook before leaving in 1999. After working his way through Vermont as a deli manager…head chef and restaurant manager, and as the Breakfast Chef for the Pitcher Inn & Spa, a Relais and Chateau Property in Warren, Vermont… he's back 'home' at the Hyde Away as Head Chef! Charles loves to ski and fly fish so Vermont is a perfect fit for him.
Chef Charles attended the University of Rhode Island for two years and then completed his education at Champlain College in Burlington, Vermont before cooking his way through the green state of Vermont and marrying the love of his life, his wife Melissa. The atmosphere throughout the Hyde Away is comfortable, casual and unpretentious…ideal for the carefully prepared American cuisine on Chef Barrett's menu. He uses only the freshest ingredients and though his down to earth preparations may be familiar to many, Chef Charles manages to put his own personal stamp on everything. The Mad River valley is not only one of the most beautiful rural resort areas in Vermont, it's also home to the American cuisine of Chef Charles Barrett.
