So, I had never heard of Ajillo peppers until I went to Cozumel this past Christmas. Popeye's (yes, like the cartoon) is a local restaurant in Old Town, and they offered local Hogfish fillets with Ajillo sauce... it was SOOOOOOOOOOOOOOOOOOOOOOOO delicious and different... unlike anything we have ever had before. My husband has been trying to duplicate it ever since we got back to the States, and he is getting close.

Anyone got any tips on Ajillo?????
